Clearspring Organic Japanese 100% Buckwheat Soba Noodles is known as "Juwari Soba" in Japanese, which means it is made from 100% wheat-free buckwheat (gluten-free) which has a distinctive buckwheat taste.
Because it does not contain gluten or binding ingredients, it requires special skills and time to produce delicious buckwheat noodles. The buckwheat grains are ground several times to produce a soft, delicious texture and can absorb the taste of the sauce served.
